One of my favorite things from when I was in Italy was caprese salad. Simple, but delicious.
All you need are tomatoes, fresh basil, fresh mozzarella, olive oil and if you like balsamic vinegar like me, go for it. Perfect for this hot weather.
I also made an iced coffee drink. Just some espresso blend coffee, skim milk, sugar-free chocolate sauce and Truvia. Mmmmmm!

ReplyDeleteHere's a quick bruschetta recipe that my husband and I used to make. All you need to do is mix the following ingredients together and let your mixture marinate for at least 4-6 hours so the juices can blend. Then once you are ready you will just need to cut your bread into slices. Then toast them on both sides. Once both sides are toasted add the tomato mixture on top and place back in the oven for a couple additional minutes until warm. Finally sprinkle with a little parmesan cheese and you are set!
* Plum tomatoes
* Garlic minced (amount depends on your like of garlic - we like allot therefore usually use 3-4 cloves)
* Extra virgin olive oil
* Apple Cider Vinegar
* Fresh basil leaves, chopped.
* Salt and freshly ground black pepper
* Italian bread
